Chopped Greek Salad

A quick and simple dinner tomorrow night made from the leftover chicken of tonight.

Ingredients

  • 2 1/2 tablespoons red-wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 3 cups chopped romaine lettuce
  • 1 1/4 cups chopped cooked leftover chicken, (about 6 ounces)
  • 1 medium tomato, chopped
  • 1/2 medium cucumber, peeled, seeded and chopped
  • 1/4 cup finely chopped red onion
  • 1/4 cup sliced ripe black olives
  • 1/4 cup crumbled feta cheese

Directions

Whisk together the first 6 ingredients in a large bowl, add remaining ingredients and toss to coat. Want to add even more vitamin packed vegetables to this simple dish?  Add chopped bell peppers or broccoli to the mix!
