Cucumber Bean Salad



  • 1 Can low/no salt cannellini beans
  • ½ Thinly sliced cucumber
  • 1 Tablespoons Olive Oil
  • 4 Tablespoons Apple Cider Vinegar
  • ¼ Teaspoon parsley
  • ¼ Teaspoon basil
  • 1 Garlic clove minced
  • Sea Salt & Pepper to taste
  • Any other seasonings of your liking



Drain beans and place on paper towels to dry. In a medium bowl mix remainder of ingredients. Add beans and chill for 30 minutes. Enjoy as a main or side dish! Simple, quick and easy!
